Some things taste better as a bite. These delicious buffalo chicken bites are no exception: easy to make, baked in the oven, and extraordinarily pop-able. Get some!
Preheat the oven to 375 degrees.
Prepare a large baking sheet by covering with tinfoil. Place a wire cooling rack on top of the tinfoil. Spray the rack with cooking spray. (The wire rack will help to evenly cook all sides of the chicken! If you don't have a wire rack, you can flip the chicken half way).
In another large bowl, add all of the dry ingredients (breadcrumbs, garlic powder, onion powder, paprika, cayenne, salt, and pepper). Stir until mixed well.
Cut the raw chicken breast into 1 inch, nugget-size pieces. (Try to make them similar sizes so they cook evenly).
In a large bowl, crack two eggs. Add 1 tbsp of almond milk and whisk well.
Dunk the chicken pieces into the eggs. Coat well.
Use two forks or a pair of tongs to pick up the chicken (let the egg excess drip off) and move to the bowl of dry ingredients.
Roll the chicken pieces in the dry ingredients so they are all coated well.
If you don't have large bowls, you might need to do this in small batches so all chicken is coated evenly.
Place the coated chicken pieces on the wire rack. Spread out as much as possible.
Spray the tops of the chicken pieces with cooking spray.
Bake for about 15-20 mins, until the internal temp of the chicken is 150.
Place the chicken pieces into a large bowl. Pour the buffalo sauce over the top of the chicken pieces. Shake and stir until chicken is evenly coated. (Add more or less sauce depending on heat preference).
Put the chicken pieces back onto the wire rack and baking sheet, and cook for another 5 minutes (or until internal temp is 165).
Serve with ranch, blue cheese dip, or your favorite dipping sauce.
Enjoy!
